20 minute white bean soup

Easy and festive Christmas Soup!

A first course soup (or, heck – serve a huge bowl as a main course!) makes a holiday meal feel elegant and special in my book. And don’t you just love creating red and green foods for your Christmas table?

A soup that fits easily into your holiday mad rush to get dinner on the table is this one – 20 minutes, tops, from grocery bag to table. And the sun dried tomato pesto and the basil pesto – red and green – make this soup so, so festive.

1 onion, diced
3 tablespoons coconut oil
4 cloves garlic, minced
2 cans (15 ounces each) white beans, drained
4 cups chicken or vegetable broth
Salt and Pepper to taste

4 tablespoons green basil pesto

4 tablespoons red sun dried tomato pesto

In a large stockpot, over medium heat cook the onion in coconut oil until translucent, about 5 minutes. Add aglric and cook another 2 minutes.

Add beans and broth and simmer for 10 minutes. Puree in a blender until smooth. Taste and add salt and pepper as desired.

Serve with pesto swirls on top.
