Fab Frugal Friday: White Bean Smash

July 31, 2009 in Frugal Tips, Healthy Fare, Side Dishes, Uncategorized, Vegan Recipes

I recently discovered a fab side dish that you can throw together with an ingredient that you can always keep in your pantry: canned white beans. So, if company shows up at the last minute, you can always grill something and smash some beans!

This dish has the same ‘comfort’ factor as mashed potatoes, and yet is so much healthier. Beans are almost always in the budget-friendly Top Ten Healthy Foods and Super foods lists. They are packed with protein and are a very frugal protein source.

This ‘mash’ has much more flavor than mashed potatoes, and is so, so , soooooo much easier to make! No peeling and boiling chunks of potatoes. I am very excited to have discovered this fun and flavorful side dish, and I couldn’t wait to share it with all of you! It will become one of my top side dish standbys.

BLUEBERRY FEST: Blueberry Basil Bars

July 28, 2009 in Desserts

The 2009 Blueberry Festival continues. No, that’s not a typo in the title. Try it if you’re skeptical! It’s a bit like a raspberry square, with graham crumbs standing in for the oats, and macerated blueberries – with a few extra flavors – instead of the raspberry jam. I found that macerating the berries about half an hour or so before starting the rest was plenty of time, but you could do this step even earlier if necessary.

BLUEBERRY FEST: Blueberry Mint Cooler

July 28, 2009 in Uncategorized

If lemons and blueberries are heavenly matched in a dessert, why not in a drink?

I wanted to make a healthy, flavorful refreshing sugar-free drink and blueberries, naturally, came to mind. The trick is to let the mint leaves steep in the hot liquid and then remove them before serving. Mint really adds a punch! I also added lemon zest, one of my new favorite ingredients. But make no mistake – blueberries are the star of this drink, and lemon and mint are used only to enhance the blueberry taste.

Fab Frugal Friday: It's All about the Presentation

July 24, 2009 in Appetizers, Frugal Tips, Side Dishes

Tomato Mozzarella Fans

Tomato Mozzarella Fans

Sometimes it’s all about the presentation. You can make a frugal dish look fabulous by trying something a little different.

Tomatoes and mozzarella can look pretty blah and ho-hum on a plate. I bought some very nice ripe medium sized tomatoes and was going to try serving them with spinach and not basil, because spinach is frugal.

I got the idea of serving them fan style to jazz up the look, and they turned out so pretty – don’t you agree?

Just slice them into thin slices from the top but DON’T cut all the way through the bottom. Cut mozzarella and spinach in half-moon shapes and insert into the slices. Drizzle a vinaigrette on top and VOILA! fancy tomato fans!

Lemony Grilled Zucchini Rollups

July 22, 2009 in Appetizers, Gluten Free, Healthy Fare, Vegan Recipes, Vegetarian Entrees

I have really enjoyed grilling this summer, especially veggies. This recipe was created by accident – I originally thought of just roasting the zucchini and then chopping it and mixing it with a little cheese. But, the grilled zucchini planks just looked so pretty off the grill, I decided to leave them whole and roll them up with a little soft cheese inside.

A Frugal Standby: Huevos Rancheros

July 20, 2009 in Entrees, Vegetarian Entrees

It had to happen eventually.

You just can’t have a frugal food blog without, at some point in time, having a recipe for Huevos Rancheros. It is the classic southwest breakfast food, and one of the finest breakfast-for-dinner dishes out there. It is also a perfect “desperation dinner” that you can throw together in just a few minutes.

Fab Frugal Friday: The Essential Universal Vinaigrette

July 17, 2009 in Frugal Tips

Balsamic Vinaigrette Indredient Still Life

The one single thing that has most improved my cooking in the last year or so can be stated in one word: vinaigrette. This magical liquid has more flavor than any substance I know. And, its nutritional value packs a punch, too. Olive oil is universally hailed as liquid gold health food, and balsamic vinegar has health benefits of its own.

Every fabulous and frugal kitchen needs a good “go-to” vinaigrette. You can flavor dishes instantly and very frugally with an all-purpose vinaigrette that is kept in the door of your refrigerator. It will keep for a couple of months at least. My new favorite is made with balsamic vinegar. This vinaigrette is delicious on so many things – a marinade for meats, a salad dressing, tossed with vegetables for roasting, a dip for bread, tossed into hot or cold pasta. The list is endless. I even like to make a simple yet flavorful snack by slicing a hard boiled egg and drizzling some over the slices. The other day I tossed some veggies in it and then grilled them. Yum!

Lemon Rosemary Grilled Chicken

Lemon Rosemary Grilled Chicken

Maybe everyone else in the whole world knew this, but I just recently discovered this great way of insuring crispy skinned chicken: a little butter under the skin!

A little fat under the skin of chicken creates a barrier between the skin and the flesh so that the skin literally “fries” while the rest of the chicken roasts. Wow. This is a great trick and so much less mess than frying chicken!

Gazpacho Revisited: Creamy Gazpacho with a Southwest Kick

July 13, 2009 in Appetizers, Healthy Fare, Vegan Recipes, Vegetarian Entrees

Creamy Southwest Gazpacho

Creamy Southwest Gazpacho

Anne’s gazpacho looked so yummy I decided to try making it with a southwest twist. Anne called her gazpacho “liquid salad,” and  likewise mine could be labeled “liquid salsa.”

I decided to throw in an avocado to try for a creamy texture. It worked great and tasted smooth and delicious, but the color was very muddy. I added a small can of tomato paste for color. Result: creaminess with a deep red color! Perfecto!
