Halloween is a time for foodies to get a little silly. A little scary. A little bizarre. That’s how I decided to turn biscuits into eyeballs.
Sure, there’s plenty of sugary stuff out there, but savory Halloween treats are more rare. And still fun. When else are you going to eat food that looks like eyeballs?
I normally am not a fan of pimento stuffed green olives. But. Strangely, I love the taste of these little bites. And, they are so fun and festive on a plate. The biscuit dough is really easy here – flour, cheddar, butter.
Serve up some food that can look back at you this Hallow’s Eve, I say!

CHEDDAR EYEBALL BISCUIT BITES
8 ounces sharp cheddar cheese
6 tablespoons butter
1 teaspoon cumin
1/2 teaspoon each salt and pepper
1 cup all purpose flour
12 large pimento-stuffed green olives
Preheat oven to 400 degrees.
Pulse cheese, butter, cumin, salt and pepper in food processor until very small bits.
Turn on food processor and slowly pour in flour, until mixture begins to form a ball.
Roll into balls that are 1 tablespoon each. Place on a baking sheet. Press a finger into the top of each ball, forming a dip. Cut green olives in half width-wise, and press green olives into center until cut center of olive is level with surface of biscuit ball. Lightly spray tops with canola oil.
Bake at top of oven for 12 to 15 minutes, until lightly browned.
