Peppermint Chocolate Saltine Toffee

  • 48 saltine crackers
  • 1 cup unsalted butter
  • 1 cup light brown sugar
  • ½ teaspoon vanilla extract
  • 1 cup (6 ounces) semi sweet chocolate chips
  • 1 cup diced toasted almonds
  • 8 to 10 small peppermint candies or candy canes, crushed into small bits
  1. Preheat the oven to 350 degrees.
  2. Line an 11 by 17 baking sheet with aluminum foil. Lay the saltine crackers on top of parchment paper close together in a single layer, covering the whole surface of baking sheet.
  3. In a medium sauce pan, bring butter and brown sugar to a boil over medium high heat. Reduce heat to medium and simmer and stir constantly for 3 minutes.
  4. Pour sugar mixture over saltines, spreading in a thin layer with an offset spatula to cover all saltines evenly.
  5. Bake for 15 minutes.
  6. Remove from oven and sprinkle immediately with chocolate chips. Wait 5 minutes for chocolate chips to melt and then spread chocolate over top in a thin layer. Sprinkle with crushed peppermint candies.
  7. Cool completely and then break into squares.
