Simple Summer Squash Gratin

  • 2 pounds summer squash (I used zucchini and yellow summer squash)
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper
  • ½ cup finely grated Parmesan cheese
  • ½ cup fresh bread crumbs
  • 2 tablespoons minced parsley (or other favorite herb)
  1. Preheat oven to 425 degrees.
  2. Slice squash into rounds that are a little thicker than ¼ inch. Toss with oil, salt and pepper.
  3. Arrange lined up tightly in a shallow casserole dish, about 8 by 10 inches, or in a 9 inch pie plate.
  4. Bake for 20 minutes. Remove from oven and tip the pan over the sink to drain some of the water that has accumulated at the bottom of the pan.
  5. Toss the cheese, bread crumbs and herbs together and scatter on top of the dish. Return to the top of the oven to cook for another 10 minutes or so, until lightly browned. Serve immediately.
