This holiday classic gets a healthy update - and takes just minutes of prep time!
  • 1 pound fresh green beans, stem end removed
  • 8 ounces cremini mushrooms, sliced
  • ½ cup sliced almonds
  • 2 large shallots, sliced ¼ inch
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper
  • 8 ounces creme fraiche, warmed
  1. Preheat oven to 350 degrees.
  2. Toss green beans, mushrooms, almonds and shallots with olive oil, and a little sprinkled salt and pepper. Roast for about 30 minutes, stirring halfway through.
  3. Toss with the warmed creme fraiche and serve.
