Compound Coconut Oil "Butters" - Easy Homemade Gifts for All The Foodies On Your List

Serves: 4 cups
  • 4 cups coconut oil (1 cup per ingredient combination below) each:
  • *3 cinnamon sticks - to infuse
  • 1 tablespoon maple syrup
  • fresh nutmeg, a few passes along the microplane
  • zest of one orange
  • *3 cloves garlic - to infuse
  • 1 teaspoon red pepper flakes
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cumin
  • pinch salt
  • *1 stalk lemongrass, outer layer peeled - to infuse
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon freshly grated ginger
  • ¼ teaspoon turmeric
  • zest of one lime
  • pinch of salt
  • *2 sprigs rosemary - to infuse
  • 1 tablespoon flat leaf parsley, chopped
  • 1 tablespoon chives, finely chopped
  • 1 teaspoon thyme leaves
  • 1 teaspoon fresh sage leaves, finely chopped
  • zest of about ½ lemon
  • pinch salt
  1. With each of the 4 flavor combination, you'll start with one cup coconut oil and the infusion ingredient, then stir in the remaining ingredients. Like so:
  2. Heat 1 cup oil in small saucepan over medium heat. Add infusion (cinnamon sticks, garlic cloves, lemongrass stalks, or rosemary sprigs). Give a stir and then reduce heat to low. Allow to steep for 30 minutes.
  3. Remove from heat, discard the infusion ingredient, and pour into mixing bowl. Allow to cool so that the oil begins to solidify over the next hour or two. Hang out in the kitchen doing something else.
  4. When the oil has softened but is not totally hard, stir in the remaining ingredients for that flavor combination. You can do this in several stages; one advantage of doing this is that it helps to prevent all the ingredients from sinking to the bottom, keeping them suspended throughout the mixture).
  5. While still soft enough to stir, divide between containers, ones made of glass, ideally. (1/4 cup is a nice small gift, or you could give the whole shebang to one lucky recipient, or anything in between.) If it becomes too hard, no big deal, just pop in the microwave for 15 seconds at a time until stirrable again, or set container in a dish of hot water to soften.
