Fab Frugal Friday: 20-Minute Five-Ingredient Berry Parfaits with Pound Cake Croutons and Tangerine Zest

Don’t you just love Berry Time of year? Seasonal berries are healthy, frugal and fabulous – perfect for this blog! So, here is a dessert that takes 20 minutes – tops! – from grocery bag to table. Each bite has a different taste: some  crunchy, some creamy, some tangy but all bites are light, refreshing and fruity. The tangerine zest is what makes this dessert extraordinary. It is the perfect bit of intensity and adds such an amazing flavor – but you can use any citrus zest you like. I made these last Sunday and my family is already begging to have this again!

Use your best clear parfait glasses – so colorful and inviting!

BERRY PARFAITS WITH POUND CAKE CROUTONS AND TANGERINE ZEST

Total time 20 minutes – serves Six.

4 cups chilled fresh berries (large berries will need to be sliced)
1 1/2 cups cold honey or vanilla flavored Greek yogurt
2 cups purchased pound cake, cut into small cubes
A little canola oil spray
1 tangerine, zest removed

Spread pound cake cubes on a baking sheet and lightly spray with oil. Stir cubes and spray again. Broil about 6 inches from heat for just a minute or two until cubes begin to brown and then stir and broil again. Remove from oven and let cool.

Layer in  six parfait glasses some berries, cake cubes and then yogurt. Sprinkle some tangerine zest on top. Repeat  until glasses are full, ending with tangerine zest. Serve immediately.

    I just realized that it really isn’t that difficult to make a parfait. I tried my first one a couple of months ago using this easy Yogurt Parfait recipe. Now I want to try yours too! :)
