Flower Power Eggs – Bell Pepper Ring Molds for Sunny Side Up Eggs!

Who needs expensive copper or stainless steel egg or pancake ring molds when you can use pretty, bright bell peppers?
For those of you alive in the 1970′s, travel back in time with me for just a minute. Remember “Flower Power?” This was a slogan of the anti-war protest raging in the country when I was a teen.That is exactly what these eggs in pepper rings look like – the bright, round flowers that were plastered on posters, walls and even our clothes back then. You can even play some Simon and Garfunkel while you eat these Flower Power Eggs to complete the ambiance. Go-Go boots optional, but Out-a-sight, Man!
There’s no recipe, really, just three steps: 1) Cut bell peppers into 1/2 inch rings; 2) Place in a non-stick lightly oiled skillet; and 3) Crack an egg in the middle of each ring and cover and cook over low heat until done. If you like your yolks runny, just cook over low heat until whites are done. If you like your yolks firm, break the yolks and then cook over low heat until both whites and yolks are firm.
We didn’t have Meatless Mondays in the 70′s, but if we did, we would have been making these for breakfast!

This is a VERY cute idea! I’m definitely going to have to recreate this at home. I always laugh when I see the one-dish specific kitchen items at stores, this is such a great (and yummy) solution.

You got to be a genius queen. This idea is so simple yet so practical. I almost bought a metal tool that you can use to shape the eggs on a pan. Why spend that extra money when you can use natural tools. I love this!

This is great ! i am so successful at making this one ! I am failing on “onion-ring eggs” .
1. how to get the perfect circle shape after cracking egg on onion.

Prabancha – You cook the onion ring eggs the very same way you do for the bell pepper version. Just crack the egg into the center of the ring – don’t worry if egg whites leak out a bit from the bottom – you can cut the excess off with a knife right before serving so it will be a perfect circle!

I was so excited to try out this idea, but with 5 tries, the egg leaked out of every “mold”. Still fun, but looking for some better solutions. I saw the reference to trying out on a baking sheet – perhaps that would be a flatter surface than a typical non-stick pan. I also saw that one person held down the pepper while adding egg – I thought about that but decided I was not coordinated enough. Maybe if I crack the egg into a separate bowl first, and then pour it into the mold while holding the pepper flat – I’ll try that next time.
Hi Kay – I have had a few “leaks” while making these eggs, but not huge ones. You can just cook it with the leaks and then trim the leaks off the outside before plating. Still the same taste, either way, but they look prettier trimmed.

Maybe I’m just a disaster in the kitchen… but these leaked pretty badly for me. To the point that I decided not to use the peppers at all, and just cook the eggs as I normally would. I tried leaving the pepper, so I could trim it, but the bottom was starting to overcook and the top was still raw (even the whites). My little one doesn’t like runny yolks, either, so no sunny side up or over easy egg will work. Maybe I’ll try baking them next time, too. Or maybe the heat was just up too much. Or maybe I just stink at egg making. The last being the most likely!
Amanda – Sorry you had trouble. I have made these dozens of times, and I occasionally have a little leakage, but nothing like what you are describing. Here’s a few trouble shooting ideas: Make sure your pepper rings are cut clean across with no zig or zags; Make sure your heat is on LOW; Cover your eggs while cooking – and you can even add a little water to the pan to help steam the egg tops. Hope this helps!
Hi I tried these but unfortunately the eggs leaked from beneath the peppers :(! No matter how evenly I cut the peppers the eggs always leaked! What do I do !!!????
Just a few ideas to try: Make sure you have a level skillet (i have a few that I wouldn’t use for this; Make sure the rings are cut evenly; keep the heat on low. If all else fails, when I have some leaks, I just trim the excess off and serve!
