Kale and Sausage Stew Recipe, also known as Holiday Madness Stew

Once again I have followed my holiday tradition of eating about 14 times too many calories on Thanksgiving. And then pie for breakfast the very next morning. With whipped cream. Oh yes. I did.
So now I am craving hearty but healthy-ish foods.
And so, this turkey-free and leftover-free soup really hit the spot.
This soup – with FIVE ingredients and FIVE minutes of prep time – is inspired by that sausage soup at that famous Italian restaurant chain that makes your taste buds dance. You can make it anytime – including when you have to dash out for another shopping trip.
Let’s just call it Holiday Madness Stew.
KALE AND SAUSAGE STEW
Serves 4 to 6
8 ounces cooked sweet Italian sausage, without casings
32 ounces boiling low-sodium chicken stock
4 cups diced kale
2 cans (15 ounces each) white cannelini beans, drained
1 tablespoon Balsamic vinegar
Place sausage and kale in a large stockpot over high heat and break sausage into small crumbles with a potato masher, cooking until lightly browned, about 2 minutes.
Add chicken stock and bring to a boil. This will take about 3 minutes.
Add in beans and vinegar, turn off heat and serve immediately.
Crusty French bread optional, but encouraged.
