I tried the overnight oatmeal craze – and never found a recipe I liked. The texture for me was not yummy – in fact, it was boring and monotonous and gummy. Then, I thought of using Muesli, a Swiss breakfast cereal with oats, nuts, dried fruits and other grains sometimes added.
It is a hit! Even if you don’t care for overnight oats, this soaked cereal is a delight! The texture is much more varied and interesting than soaked oats. It is so good that I sometimes take a paper cup full of soaked muesli on my commute to work.
I just like it plain, topped with whatever fruit I have on hand, but I think some other creative spins on overnight muesli are worth a try!
I used the shortcut of purchased muesli, but I would love to try making this home version by my friend Becky at Vintage Mixer.
Here’s a list of possibilities for jazzing up your overnight muesli:
Carrot Cake Overnight Muesli
To your basic muesli, add a tablespoon of vanilla, one grated carrot, raisins, ½ tsp ground cinnamon, and 1 tsp honey. Leave overnight and top with extra raisins, toasted walnuts and a sprinkle of cinnamon in the morning.
Creamy Strawberry and Chia Overnight Muesli
Add almond milk, chia seeds, honey and thinly sliced fresh strawberries to your muesli. Before serving, top with extra sliced strawberries.
Mango and Coconut Dream Overnight Muesli
For a tropical twist, add coconut, chopped fresh mango, chopped fresh pineapple and coconut milk to your muesli. In the morning, finish with some vanilla more fresh mango and a sprinkling of toasted coconut flakes.
Blueberry and Banana Overnight Muesli
Stir mashed banana, fresh blueberries, and maple syrup into your oat mixture; then serve topped with more fresh berries and some toasted almonds.
Peanut Butter and Chocolate Overnight Muesli
For an indulgent take on this classic dish (and one that the kids will love!), add natural peanut butter, maple syrup, cocoa powder and a dash of vanilla extract to your overnight muesli mixture. You can even stir through some chocolate chips if you like! Serve topped with slices of banana.
2 cups Muesli
2 1/2 cups milk (I used unsweetened almond milk)
Stir together and refrigerate overnight. Eat chilled, or heat in a microwave. Top with chopped fruit.
