Savory Cheddar and Sweet Potato Torte

There is a great debate at our house every year: What form will the sweet potatoes take for Thanksgiving? Usually it is a standoff between the Mashed Fans and the Marshmallow Topped Casserole Fans. Sometimes, I call a truce and make them both.

This year, I decided to try an unusual combo, sans marshmallows, with the sweet tubers and cheddar cheese.

Yes, I know. Sounds weird. But, cheddar works well with regular potatoes, so I figured, why not try it with sweet? Don’t knock this until you try it – the cheddar/cream/hot sauce combo is a perfect flavor match with sweet potatoes, and tones down their sugary character. And the surprise: The cheddar gives this dish an amazing dimension.

Five ingredients plus thin potato slices fanned out in layers and – Voila! – the perfect savory sweet potato dish.

Dulce de Leche and Chocolate Chunk Bread Pudding

What’s more comforting  and fall-ish than bread pudding? OK, I can up the ante: chocolate chunks in bread pudding with dulce de leche mixed in and drizzled on top. So warm and comforting.

Using dulce de leche feels almost like cheating as a cook. The rich, sweet gooey stuff takes most any dessert from OK to spectacular with so little effort. And, you need to check out Baking Obsession’s “explosion-free” trick for making your very own dulce de leche effortlessly in your slow cooker.

This is one of the best sweet bread puddings I have ever eaten. And trust me, I have sacrificed so much for all of you for years and years of consuming hundreds of bread puddings so that I could bring you the very best taste and texture.

And so, my friends, here it is. Sweet. Flavorful. Creamy. And just in case it’s not decadent enough, drizzled with extra dulce de leche.

What’s better than cooking a delicious dinner for loved ones? Cooking along side your loved ones!

There are two kinds of people: those who are just present in the room and those who brighten the room they are in. My sweet Amy is in the latter group. You just cannot be in a bad mood when Amy is nearby. She has a smile and a spirit that shines brightly and warms you, welcomes you, comforts you.

Amy has been a joy and pure delight to me every single day of her 27 years – she turns 27 TODAY! If any of you out there are on the fence about whether to have children, please call me and let me talk about my daughter Amy. Plan on talking for about 3 hours because it will take me that long to tell you all the reasons I am so lucky that Amy is my daughter.

I usually make a birthday dinner for each of my kids – letting them pick their menu. But last night, Amy cooked for us for her birthday dinner. She is growing to love to cook, and has a few recipes in her repertoire that are spectacular. Alfredo Sauce is one of them.

Never, not even at fancy expensive Italian restaurants, have I ever tasted an Alfredo sauce as delicious as Amy’s. It is not just thickened cream with some garlic thrown in, but an intensely flavorful and full bodied sauce. (( WARNING: DO NOT MAKE THIS SAUCE IF YOU ARE COUNTING CALORIES. This the ultimate rich, fatty sauce! )) Try this one for a decadent Meatless Monday treat!

The Pecorino Romano and Parmesano Reggiano combination adds intense depth and flavor, and the cream cheese is much more flavorful than just plain cream. I say forget the pasta – just give me a bowl of Amy’s sauce and a spoon!

Could YOU Live on Food Stamps? Take the Challenge with Our Mahogany Chicken Thighs Recipe and a Day of Frugal Foods

I just realized that I am lucky. Very lucky. I have the luxury to be able to dash to the grocery store frequently and rarely think of the cost of groceries, unless I’m splurging on an item like crab or shrimp. But a hunk of Parmesano Reggiano? No problem – just grab a hunk and head home.

So when I saw a news article recently advertising a “Food Stamp Challenge,” I was intrigued. Only $4.00 per day per person??? Could I really live on cook delicious food with that??? Not just live on drive-thru food-like substances, but make real, healthy, delicious, actual food?

I decided to take the Food Stamp Challenge and find out. Next week the state is challenging folks to try to eat with the same amount of money as folks who live on food stamps November 8 though 14. That’s $4.00 per person per day. It almost goes without saying that this is incredibly hard to do. Even chicken thighs, a very frugal cut of chicken, are about 75 cents per thigh, which is half of the allotment for one entire meal.

It was hard – very hard – to come up with even one day’s menu – let alone come up with a week – or, Heaven Forbid, a lifetime – of menus that fit the challenge.

My heart goes out to all the folks who live this as a way of life and not just a limited and obviously artificial challenge – especially the single moms who work hard, nurture kids, pinch pennies and deal with all the stress that comes with poverty. Years ago a very close lifelong friend of mine had a period of extreme poverty with an unemployed husband and five small children. She said to me “When you’re poor, you can’t do anything else but Be Poor – all your energy, your whole being is focussed on survival, and you have room for little else in your life.”

Who would guess that polenta could be a dish pretty enough to impress all your friends and neighbors? Heck, this one is even pretty enough to impress your boss!

Sometimes it’s all about the presentation. Sure, I have made polenta before with flavorful toppings. I even got fancy once and did a chili polenta parfait.

But then I saw a Rolled Omlette and was inspired to “roll” my polenta for a much prettier presentation. I was a little nervous that the soft texture of the polenta would turn into a big mess, but I was wrong. So, so wrong. Let me tell you, this works like a charm!

Try this humble peasant food turned into a foodie delight with a minimum of effort for your next Meatless Monday feast.

White Chocolate Oreo Halloween Pops for an Easy Festive Halloween Treat

When it comes to Halloween treats – the easier the better I say. Halloween is truly the most fun when you have small children. They love the spookyness. They love the costumes. They mostly love the candy and treats.

Here, for your viewing pleasure,  are a few of my favorite photos from The Kelly Family Halloweens past. Yes, that’s me as Little Red Riding Hood with The Hubs as The Wolf. Pure corn, I know.

But, with all the Creepy Crawly Craziness, there is little time for making homemade treats.

Oreos to the rescue! Hey, why not? They’re already appropriately black with ghostly white centers.

It’s only a few days until the spookiest day of the year.

So, here’s the recipe: the WHOLE recipe: Melt white chocolate. Put a wooden stick into an Oreo and dip it in melted white chocolate. Decorate to look Halloween-y.

That’s it. Really.

Caramelized Banana Pudding Recipe – A Childhood Favorite Upgraded

I have the most amazing husband on the planet earth. I have been treated like a queen every single day of my 34 year (and counting) honeymoon.

So, you will understand when I tell you that there is no better reason to cook fabulous food than to make Jim smile. The best thing about Jim as a sounding board/critic is that he loves me enough to be honest. Truly Honest. “This-dish-stinks” kind of honest.

So, when he tasted the banana pudding dish that I made this weekend, it was a great moment  for me when he closed his eyes, smiled and said “This is heaven.”
Classic banana pudding, an Americanized banana trifle recipe popular in the 1950s and 1960s, is layers of vanilla wafers, pudding, whipped cream and bananas. Jim ate this dish along with the rest of Americans a kid and this recipe topped his food memory. The secret, I’m convinced, is the homemade pudding, and not using the store-bought box. It is truly write-home-about remarkable.

I was given the blog A Spoonful of Thyme as part of this month’s Secret Recipe Club challenge. California blogger Kate shared a Roasted Banana Pudding recipe and I made her recipe to a “T” except I caramelized the banana slices with a little butter and brown sugar in a hot skillet instead of roasting them. Kate’s pudding was fresh and flavorful and light – delightful. Thanks, Kate, for a recipe that I memorized and will use again and again for dessert deliciousness!

Breakfast Apple Cobbler Recipe – Dessert for Breakfast? Yes Indeed.

Oatmeal Apple Cobbler for Breakfast . . . or Dessert!

Baked apples. Cinnamon oatmeal. Toasted walnuts. All of these are delicious on their own. But, together they are a fall flavor festival!

When a friend of mine told me about his baked oatmeal apple breakfast, I couldn’t wait for Saturday to roll around so I could make it. He stirred all the ingredients together, but I decided to separate the apple mixture out and turn it into a cobbler. A breakfast cobbler. Can’t think of a better way to start a fall day – can you?

This does have a small amount of sugar – just enough brown sugar to give the oatmeal a classic homey taste. And, this is a dish that is naturally gluten-free!

Two Halloween Cheeseball Recipes – Eat, Drink and Be Scary!

Spooky Spider Cheeseball Recipe for Halloween Hauntings

Food should be fun, I say.  And sometimes weird, freaky or scary. Like on Halloween, for example.

In  Halloweens past we have whipped up a jack-o-lantern cheeseball by crushing nacho cheese Doritos and rolling the cheeseball in the crumbs.

This year, I wanted to attempt an all edible spider cheeseball, but was at a loss as to what would be savory and black and edible. Then, I was cleaning out my spice cupboard a few weeks ago and came across a huge jar of black sesame seeds that have been lurking at the back of the top shelf for ages now. BINGO! Black sesame seeds are perfect, and look very spider-ish, I must say.

You can use your favorite cheeseball recipe and then just roll it in the seeds on a plate. Or, use our recipe below. Either way, I promise it will be the hit of the party.

Apple Rings with Cinnamon Cream Syrup for Dipping: Not-Your-Mama’s Apple Dessert Recipe

This is Not-Your-Mama’s apple dessert. Not even close. This is a sweet dessert version of onion rings. Sweet. Crispy. Dipped in a cinnamon cream “ketchup.” These are not just good, they are OhMyGosh Amaaaazing.

How does my brain think of these things?

Let me explain.

I love crave worship daydream about onion rings. They are one of my very most favorite guilty pleasures. In fact, when choosing a burger joint, I always choose the one with the best onion rings. Burgers are burgers, but onions rings, well . . . they are a culinary wonder. When apples are in full delicious seasonal glory, I love making these rings that were inspired by one of my late-night onion ring cravings.

If you own a set of varying size biscuit cutters use them  to make these rings by cutting  the apple slices into rings of different shapes.  If you don’t, just core the peeled apples and then slice them into thin, flat circles.

Make sure you peel the apples first before starting, because the batter won’t stick to the apple peel. Then dip and fry. You must watch closely, so the rings don’t cook too quickly, but really, that’s the only tricky part.

Drizzle with your favorite syrup or warm caramel sauce. A Meatless Monday fall treat!

Then, just sit back and wait for the Oooohs and Aaaahs.
