Peppermint Chocolate Saltine Toffee

If you have a last-minute need for an easy, delicious holiday treat, this is your answer! Saltine cracker toff is a genius idea for making toffee that is both sweet and salty, ready with just a few minutes of prep, and completely foolproof.

I discovered how easy and delicious this toffee is when I made Saltine Toffee for Valentine’s Day – and the twist to make it Christmas-y is the crushed peppermint candies on top.

I suggest you take a plate full of this deliciousness to your next holiday event – and then stand back and watch the reactions. “Oh Wow!” “Ummm, salty and sweet.” “OOoooh! So good!”

The saltines not only add saltiness, but they make the texture so great here. No more failed crumbly or teeth-breaking texture. This texture is perfect – firm but not too hard.

PEPPERMINT CHOCOLATE SALTINE TOFFEE

48 saltine crackers
1 cup unsalted butter
1 cup light brown sugar
1/2 teaspoon vanilla extract
1 cup (6 ounces) semi sweet chocolate chips
1 cup diced toasted almonds
8 to 10 small peppermint candies or candy canes

Preheat the oven to 350 degrees.

Line an 11 by 17 baking sheet with aluminum foil. Lay the saltine crackers on top of parchment paper close together in a single layer, covering the whole surface of baking sheet.

In a medium sauce pan, bring butter and brown sugar to a boil over medium high heat. Reduce heat to medium and simmer and stir constantly for 3 minutes.

Pour sugar mixture over saltines, spreading in a thin layer with an offset spatula to cover all saltines evenly.

Bake for 15 minutes.

Remove from oven and sprinkle immediately with chocolate chips. Wait 5 minutes for chocolate chips to melt and then spread chocolate over top in a thin layer. Sprinkle with peppermint candy bits.

Cool completely and then break into squares.
