Confession time: I don’t like Honeydew melons, usually. But. This “gazpacho,” a.k.a. cold soup, is a revelation. It has just the right sweet/savory balance with just four ingredients.
To-wit: one Honeydew melon half; two ribs of celery; one cucumber, peeled; a few mint leaves. Cold, liquid summer deliciousness. Just whirl in your blender, then strain.
I served it in shot glasses as a part of my usual Sunday night spread, to rave reviews. It is pure cool summer freshness in a glass!
Halfway thru Summer, folks ~ eat all the melons you can, I say!
