Reborn in the Kitchen: Savory Parmesan Crusted French Toast Anytime 24/7

Savory Parmesan Crusted French Toast with Roasted Tomato Garnish

As a young bride I made French Toast at least three times a week. The whole time I was cursing and berating myself for not paying enough attention to what my mom was doing in the kitchen and for not learning from her while I had the chance instead of grumbling while making the family salad. So, when I was forced to feed myself and my new hubby, I turned often to breakfast for dinner. Again and again. Bread soaked in custard – who can screw that up? So, over and over again I soaked bread and slapped it in a pan and then slathered it with butter and syrup. It was a mainstay, and my sweet eternal companion choked it down, smiled and loved me anyway.

But in the last ten years, I have been culinarily reborn. I have become adventurous, yes, even daring in the kitchen. My latest food fetish is savory French Toast. Why not savory? Really, is French Toast required to be soaked in sugary syrup or piled with sugar and fruit and whipped cream? Bread soaked in custard is pretty much a blank canvas, so why not paint it with savory flavors?

I wrote a little French Toast cookbook a few years ago, and I made a cheddar crusted French Toast, which was yummy, but tricky to get just right on the crust without burning the cheddar. So, I don’t hassle with that very often.

Recently I discovered THE CURE: Parmesan cheese!  ((Parmesan is the chocolate of the savory world. Parmesan, like chocolate, cures so many things, does it not?))  Like a ray of sunshine beaming down with angelic choirs singing, Parmesan has refreshed my culinary soul once again!

Parmesan makes the perfect crust for French Toast, because it is a hard cheese. It makes more of a crunchy “crust” than, say, soft melty cheddar. I made this delicious savory version with a little roasted tomato garnish. You could use marinara instead. Either way, this makes an almost effortless dinner -perfect for busy Meatless Mondays!

Accidental Enchiladas – Flavorful Flat Cheese Enchiladas Recipe in Five Minutes Flat for Meatless Monday

No need to do drive-thru with this fabulous new enchilada recipe – in FIVE MINUTES – TOPS. Yes, you read that right. Enchiladas in five minutes flat. And that includes grating the cheese.

I was making quesadillas the other day for my son and it occurred to me (Ding! Ding! Ding! Light bulb above head goes on!) that the same technique would work for getting enchiladas done in just minutes. It’s not often that I discover new dishes by accident. And, when I do, they are usually just ho-hum. But. These are a definite home run! I don’t know why I didn’t think of this years ago. Now the words “easy” and “enchiladas” can be in the same sentence!

All you do is spray a corn tortilla with oil and then lay it in a hot skillet for a few seconds. Turn it over and top one half with grated cheese. Then fold it over once and cook until cheese is melted. Fold it over again and then you have a nice little enchilada triangle. Then, just dunk it in or drizzle it with your favorite easy enchilada sauce and sprinkle on your favorite southwest garnish (cilantro, green onions, etc.) and – Dinner is served!

Fab Fast Food – Pesto Pita Pizzas Recipe for Our First ‘Fab Five’ Feature

Real life sometimes involves “grab-and-go” eating when you’re running out the door.But, we ask: Can that food be healthy and affordable and fabulous at the same time?

We here at FFF know the reality of busy lives. Anne is a busy mom of a preschooler. Enough said. I myself have a stressful 50-plus hour a week job as a prosecutor handling child abuse cases and sex crimes, plus volunteer work that takes about 10 hours a week and adult children and a hubby that regularly need my time and attention. Not to mention co-blogging on two food blogs. Whew!

Yes, we are slow foods advocates here at FFF. We love the luxury of leisurely cooking, hopefully with a loved one. We try to do this as much as humanly possible. I believe strongly deep down in my bones that cooking and eating together regularly as a family is one of the most important things we can do for our well-being – physically, emotionally, spiritually.  But. There are times when you just need to get something into everyone’s mouths pronto.

Today we begin a new feature- Fab Five. We take on the challenge of making dishes that use only FIVE ingredients and take only FIVE minutes from grocery bag to table. And, here’s the real challenge: with healthy ingredients and as few processed foods as possible!

These pita pizzas fit this bill perfectly. You just throw them in the oven right on the racks slathered with a three cheese mixture and then drizzle pesto on top. Fabulous in Five. What’s better than that?

Invite Julia Child to Your Holiday Celebration – Easy Elegant Cheese Tartlets with only Five Ingredients

Julia Child's Easy and Elegant Cheese Tartlets

Easy and Elegant is always a winning combination. That’s what I love about Julia Child’s recipes – they are unquestionably elegant, but Julia makes them easy enough for an average home cook like me to master.

I love Julia Child. I often pause in my kitchen and repeat the phrase that Christians often use: WWJD? – but when I’m  in my kitchen WWJD means “What Would Julia Do?” Whenever I feel discouraged about my cooking prowess, I snuggle on my couch late at night and watch an episode of The French Chef. I laugh out loud every single time, and am strengthened and renewed. When truly serious discouragement hits me, I bring out the big guns: Saturday Night Live’s French Chef Skit: “You’ll need a knife . . . a very, very, very sharp knife. . .” I dare any cook to watch this and not laugh out loud!  It was during one of those late-night couch sessions that I saw her make cheese tartlets. I took copious notes, and I’m glad I did, because I have not been able to find this recipe written down anywhere. You’ll just have to trust my note taking on this one.

I don’t know about all of you, but I’m inviting Julia to my New Year’s Eve celebration this year by making her cheese tartlets. Yes, I know. They are neither low-fat nor low-calorie. But. It’s the Holidays! Let’s Celebrate! I am certain that Julia would agree.

These are a masterpiece. Truly. I dare you to make appetizers that are as simple and yet sophisticated as these. It is impossible. They are the perfect blend of rich, satisfying flavors and melt-in-your-mouth comfort. If you have a favorite pie crust recipe, use that, or check out my miracle Never-Fail Pat-in-the-Pan Pie Crust. The best pie crust I’ve ever eaten!

Bonus: they take only minutes to throw together. Another bonus: they are very forgiving, and can be served warm or at room temperature. Make yourself a resolution right now to add these mini-tarts to your Hostess Bag of Tricks. I promise you won’t be sorry.

Fab Frugal Friday: 20-Minute Five-Ingredient Berry Parfaits with Pound Cake Croutons and Tangerine Zest

Don’t you just love Berry Time of year? Seasonal berries are healthy, frugal and fabulous – perfect for this blog! So, here is a dessert that takes 20 minutes - tops! – from grocery bag to table. Each bite has a different taste: some  crunchy, some creamy, some tangy but all bites are light, refreshing and fruity. The tangerine zest is what makes this dessert extraordinary. It is the perfect bit of intensity and adds such an amazing flavor – but you can use any citrus zest you like. I made these last Sunday and my family is already begging to have this again!
