The first time I made vegan cookies – no eggs, no butter – I was shocked at how good they were. These will shock you, too. More heart healthy than many cookies – and no Red Dye No. 2 – colored naturally with beets!

 These vegan delights were inspired by Sweet Beet Cookies from Weelicious, who finds ways to get veggies into her kids foods in such unique and creative ways. Lucky kids!

Flourless Sesame Almond Cookies Recipe

Flourless Sesame Almond Cookies

“Healthy” and “cookies” are two words that don’t play well together. Usually.

No White Flour. No White Sugar. That’s my mantra for 2013. My Fabulous co-blogger and daughter Anne is also not a white flour fan. But we do happen to be cookie fans. . .  so . . .

The Challenge: make a flavorful crispy cookie with no flour and no white sugar. Extra curveballs: make it vegan and make it gluten free. I am happy to report success! The recipe was inspired by gluten-free blogger Elana at Elana’s pantry. I tweaked the taste of her Sesame Cookies by adding a tablespoon of cocoa powder, and some almond extract, with an almond on top. Triple the almond goodness! The cocoa powder does not add a strong chocolatey flavor, just richness.

Almond flour fits the bill perfectly – and makes rich, flavorful cookies that are crispy on the outside but creamy on the inside.

Healthy, but still sinful tasting.

Forgive me for crowing about this one a little, but this is a triumph. Just the other day, while working on a biscotti recipe, I was lamenting how difficult it can be to convert recipes to gluten-free AND vegan at the same time; one at a time,  often manageable enough, but together, they can create some serious issues, texture in particular. (I eventually worked out the biscotti, as you’ll see in the next post.)

This heavenly shortbread, originally discovered on Epicurious, had been a regular in my holiday lineup for years until I gave up the gluten in 2008, and I can’t say how pleased I am with this version, rendered gluten, dairy and egg-free.
