Three M's Roasted Chicken Thighs Recipe: Mustard, Maple Syrup and Molasses

Chicken thighs are under-used and under-rated, in my humble opinion, so I wanted to have a good go-to quick easy recipe for chicken thighs specifically, one that pairs well with dark meat.Â Thighs are flavorful and moist, and usually at least half the price of chicken breasts. My favorite grocery store had skinless thighs on sale recently for 99 cents a pound – and so each thigh is about 25 cents! I knew what we would have for dinner!!
I have been experimenting with making a quick glaze that is sweet, spicy and flavorful, and will have a golden brown glow.
After about 87 tries, I came up with a winning combo: mustard, maple syrup and molasses. This takes a maximum of 10 minutes prep time, less if you buy your chicken thighs skinless. All you do is remove the skin, place the thighs on a baking sheet and then ladle on the sauce. You want this sauce to be thick, so brushing won’t work. I spread it on with the back of a spoon.
THREE M’S ROASTED CHICKEN THIGHS
Prep time: 10 minutes
Serves 4 to 6.
8 skinless chicken thighs
1/2 cup spicy brown mustard
3 tablespoons maple syrup
2 tablespoons molasses
Preheat oven to 375 degrees.
Place chicken thighs on a baking sheet. Stir together mustard, maple syrup and molasses. Spread mustard mixture on top of each thigh with a spoon – making a thick coating.
Bake at top of oven for 55 to 60 minutes.
