Eggnog is one of those drinks that I take a token sip once a year. I mean, drinking raw eggs is just gross to me. Who is with me on this??? I’ve never liked the stuff.
I am happy to report that I have found a vegan nog that is festive and yummy and obviously egg-less. You can also buy vegan nogs (here’s a review of dairy free nogs) these days – Silk makes a pretty decent one if you want to save time and hassle.
This drink has a creamy texture and just a hint of peppermint, making it the perfect enlightened holiday nog.
You soak cashews in boiling water, blend them with a milk of choice and add in crushed peppermint candies as desired. Sweet peppermint flavor replaces the egg-y nutmeg taste.

VEGAN PEPPERMINT NOG DRINK RECIPE
2 cups cashews
4 cups unsweetened almond or rice milk
2 cups water (or more to desired consistency)
2 tablespoons crushed peppermint candies (or more as desired for minty-ness)
Soak the cashews in boiling water for at least one hour, cooling to room temperature.
Blend soaked cashews with one cup of the milk until smooth. Add and all other ingredients and continue to blend until smooth in a blender. Add more water if desired for consistency, and add peppermints as desired.
