Zucchini Ribbon Quilt Block Salad

Cooking and quilting. These are a few of my favorite things. In heaven I am hoping that folks get to do whatever they love doing. If I am right, you will find me cooking and quilting.

This salad was created for a friend of mine who is a joy to quilt with. She has exhibited her quilts in international festivals and was once offered $10,000 for a quilt, AND turned it down. Her quilts are like her children to her – unique and priceless. She spent hundreds of hours helping me hand quilt a quilt when my precious daughter Amy got married a few years ago, and I will be eternally grateful for her loving service. We have been fast friends ever since. Beautiful bonding happens in the kitchen and at a quilt frame.

So, last week I decided to blanch some veggies, including zucchini ribbons, and make her a quilt block salad. Zucchini is one of my favorite things to work with – so versatile. Did you know that zucchini is not a vegetable, but an immature fruit? That’s right – it’s a part of a zucchini plant’s flower, so botanically it’s a fruit! And a nutrition powerhouse, too.

You can make this easy salad in just about 10 minutes. Just slice zucchini into long ribbons, blanch for just a few seconds, arrange with a few colorful veggies, and drizzle on some vinaigrette. Then, sit back and wait for the oooh’s and ahhh’s! Oh yeah, they will come. Guaranteed.

ZUCCHINI QUILT BLOCK SALAD

2 small zucchini – 6 to 8 inches long and 1 inch in diameter
2 small yellow squash, 6 to 8 inches long and 1 inch in diameter
Red, orange or yellow bell pepper, cut into 1/4 inch rings
A few green onions, cut on the bias
A few cherry tomatoes, sliced
2 tablespoons favorite vinaigrette – I used a balsamic vinaigrette

Bring some salted water to a boil.

Slice zucchinis lengthwise into planks about 1/4 inch thick. Blanch in boiling water for about 20 to 30 seconds, until just softened but not mushy. Remove and shock in cold water.

Arrange zucchini in a lattice pattern, forming a square on a salad plate. Arrange other veggies on top of square, to look like a quilt block.

Drizzle with vinaigrette. Serve. Makes 2 salads.
