Healthy Hollandaise sauce? Is there such a thing?
I discovered the answer is YES – out of desperation.
I needed to make a Hollandaise sauce for a crowd. I had little time and no lemons. But. I did have Greek yogurt and eggs.
These two ingredients are all you need for a healthy, super easy mock Hollandaise sauce.
So, it’s so simple. Really. And it takes just about 5 minutes to make.
All you need is some good quality Greek yogurt. I used the full fat version, but you could try a low fat Greek yogurt. (I haven’t tried that, but come back and let me know if you do!) And a few eggs.
I used two large eggs and two egg yolks to one cup of Greek yogurt, and that works perfectly.
You will have a smooth, velvety and unctuous sauce that is so, so close to the original famous French sauce.

TWO INGREDIENT HEALTHY HOLLANDAISE SAUCE
1 cup good quality Greek style yogurt
2 large eggs and 2 egg yolks
1 teaspoon salt
Place the yogurt, eggs and egg yolks in a small skillet or saucepan. Whisk together.
Set over medium heat and begin whisking. The mixture will seem watery at first, but be patient. Within just a few minutes, the mixture will thicken. Whisk to desired thickness and then add salt. Taste. If the mixture is too tart for your liking, add in a pinch or two of sugar. (( NOTE:This will depend on the tartness of the brand of yogurt you have used.))
OPTIONAL STEP: If you like your Hollandaise sauce to be a little airy, you can blend this mixture in your blender for a few minutes, adding a bit of frothiness to the sauce.
EVEN EASIER METHOD: If you have a high-speed blender with a “soup” setting, just place all ingredients in the blender on the soup setting and blend for about 3 minutes, until such is hot and thickened.
