Two-Ingredient Healthy Hollandaise Sauce

And you thought Hollandaise sauce was hard!
  • 1 cup good quality Greek style yogurt
  • 2 large eggs and 2 egg yolks
  • 1 teaspoon salt
  1. Place the yogurt, eggs and egg yolks in a small skillet or saucepan. Whisk together.
  2. Set over medium heat and begin whisking. The mixture will seem watery at first, but be patient. Within just a few minutes, the mixture will thicken. Whisk to desired thickness and then add salt. Taste. If the mixture is too tart for your liking, add in a pinch or two of sugar. (( NOTE:This will depend on the tartness of the brand of yogurt you have used.))
  3. OPTIONAL STEP:  If you like your Hollandaise sauce to be a little airy, you can blend this mixture in your blender for a few minutes, adding a bit of frothiness to the sauce.
