Peach Cucumber and Crab Parfait with Garlic Aioli

  • 1 large egg
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup extra virgin olive oil
  1. Place all ingredients except oil in a blender and blend until smooth. With the blender on high, slowly stream in the olive oil, and continue to blend until the aioli is thick.  Chill before using. Stores in fridge for one month.
